Vegan Asian Ginger Plum Lettuce Wraps

These Asian ginger lettuce wraps are just seven simple ingredients tossed together and served on lettuce leaves. It doesn’t get much easier.

Well, actually, it does. I cut corners by buying packaged cole slaw shreds. Told you this was all about quick ;)  It definitely doesn’t taste like a ten-minute meal, though. It’s full of flavor, thanks to the Asian dressing.

The best part: each wrap (if you make eight small ones) is only 60 calories! I made four large wraps instead, but still – only 120 calories each.

Pro tip: make sure to thoroughly wash and dry your lettuce for the best crispy, crunchy results!
