Vegan Peanut Butter Chocolate Chip Cookie Bites (Gluten-free)

I kept seeing this recipe all over Pinterest. That ooey-gooey, melty chocolate photo finally got the best of me and I decided to see if these grain-free little devils tasted as good as they looked.

Unfortunately, I noticed that there have been a few other bloggers who have made this recipe, then stolen the original photo, which they posted to Pinterest with a link to their own blog. Dude, that’s not cool. Don’t do that. That’s stealing. Post your own photos.

I finally tracked down the original recipe source (or at least it appears to be the original source). In any case, I’m so glad I found the Texanerin Baking blog because the blog author, Erin, has some mad baking skills.

There are loads of healthy baked goods (and mouth-watering photos) on her newly re-designed site, including several gluten-free and vegan options.

Who knew that a cookie made from chickpeas (yes, you read that right) could be so good?! On yesterday’s post (which involved tacos with roasted chickpeas), a commenter wrote “Is there nothing the chickpea can’t do for us?”

She’s so right. From tacos to cookies, the chickpea proves to be one of the most versatile ingredients. I don’t know what gave Erin this idea, but it’s pretty genius.

The dough is a little weird and sticky, but if you wet your palms slightly it will be easier to form the cookie balls. And don’t bother taste-testing the dough–the finished product is much better, I promise.

When baked, my cookies seem to have kind of a dull, almost grayish color from the outside, but the insides tell a different story. These little bites are very soft and gooey, almost like half-baked cookie dough. The trouble is not eating too many at once. They are a bit addictive.

Erin said to definitely serve them warm, which I agree – almost any cookie is best fresh out of the oven, slightly cooled. But I didn’t mind them completely cooled either.

Be sure to read all of Erin’s notes in the recipe–it will save you the hassle if you follow her tips!

So, am I just late to the chickpea cookie party? Has this concept been around for a while and I’m just now discovering it?

For those of you who think this is old news, please share a link to your favorite chickpea cookie recipe! I’d love to try more of them. Here are some of my favorite vegan chocolate chip brands to use in these cookies.

  2. Let’s do a whole month of chickpea recipes! Which I declare as I am filling my face with roasted chickpeas. Although now I want them to un-roast themselves so I can turn them into these cookies!

  3. People do that with my picture? :( I didn’t even know that. Lots of content stealing sites have flat out stolen the recipe and picture, but this thing with bloggers using my picture and then pinning it. That’s just… low.

And thanks for linking to me (yes, it’s the original source of the recipe :)) and for saying all those nice things about my site. I’m so happy that you liked the cookies enough to share them!

    • Unfortunately, yes they do. I clicked on your close-up melty shot a couple different times (from Pinterest) and it went to a post where that photo was nowhere to be found, so I assumed it was stolen. I just kept looking until I got linked up to your site and figured it was most likely the original source. It’s a shame that you can’t share without getting completely ripped off. I’m glad you shared the recipe, though because it’s fabulous!!! Can’t wait to try some more of your creations :)

  4. oh my garbanzo goodness… these were quite the little surprise! kept wondering how this was going to turn out with no flour, no sugar no shortening etc… delicious warm but really tasty cold from the fridge! made a batch and used my little cookie scoop so universal sized, no messy hands and then pressed with the back of a wet spoon. stuck in a mason jar in the fridge and gone by midmorning. the hubs approved! oh and added chia seeds for even more nutrition. thanks!!! YUM!

  6. I made these first mashing as well as i could with a fork and then kind of blending the better to be smoother with my non-highspeed blender and it still worked out really well! tastes great with dried cranberries added along with chocolate chips and even better when frozen. :)
