Vegan Creamy Strawberry Herb Balsamic Dressing (Gluten-free)

Sometimes I get in a rut with salads and then I get sick of them. I need to change up the ingredients more often. Throw in a more fruity version like this one once in a while. Unless you’re like my dad who doesn’t like fruit in his garden salad. Then you’re just missing out, I guess.

Vegan Creamy Strawberry Herb Balsamic Dressing Gluten-free

This post isn’t a recipe for a salad (it’s pretty easy to figure out the ingredients: spring salad mix, sliced strawberries, blueberries, cooked asparagus, pecans). Rather, I’m sharing the recipe for the magic ingredient–the DRESSING! This is a sweet, tangy, creamy dressing that is so easy to make.

Just throw the ingredients into the blender and you’re done. Boring salad crisis averted.

Vegan Creamy Strawberry Herb Balsamic Dressing Gluten-free

I found a similar recipe from Kathy Hester and adapted it slightly, based on what I had on hand. Hubs and I both really loved the result. I prefer it with mint, but basil works well, too. A few weeks ago I planted a mini herb garden in one of my deck railing planters.

It’s still in the greenhouse at this point (along with my flower-filled planters) because we live in Michigan and you never know–it could snow tomorrow. Ugh. Anyway, the mint is taking off like crazy. It’s such an easy herb to grow.

I love to toss a few leaves in my smoothies (try banana + coconut milk + mint leaves + vanilla + ice… YUM!).

Today I’m heading to a mega greenhouse with friends and I’m thinking I might want to pick up supplies for a second herb garden. I use fresh herbs in just about everything, so I go through them quickly. Have you seen this vertical herb garden idea using a shoe organizer?! GENIUS! What a great Mother’s Day gift this would make.

  3. Thanks for the reminder to include strawberries in salads! I had a small dinner party last night (5 adults, 1 preschooler, 1 toddler) and everyone snarfed it up! I tossed quartered strawberries with balsamic then set aside. Then toasted pecans and tossed them with maple syrup, salt, and pepper and cooled those. Then tossed everything together with salad greens. Yummy!
