Ahhh – SUNSHINE!!!! Finally. Nice weather can do wonders for my ambition level. It’s like the sun is beaming down all this energy into my body. Over the weekend, Hubs and I managed to get a whole lot of work done and continued right into Monday and Tuesday. Now we can barely move. We replaced the carpet in our living room with hardwood maple. There are just a few rows left to install, then onto sanding, staining and coating. If you want to test your marriage, this is a good way to do it. It doesn’t help that I might be the pickiest person on the planet. It DOES help that I married the most patient person on the planet. Joking aside, we’re actually a…

Test Report: Chickpea Ratatouille (vegan, gf)
Wow. What a week. The Boston Marathon bombing (which continues to unfold as I type this post), the explosion in West, TX, and then storms/flooding in our area. Sure does put our “problems” into perspective, doesn’t it? While this very wet, gray, cold weather is not fun, I find it hard to complain when I look at the big picture. The folks in Boston and West, TX need our prayers. Don’t forget about them. As I mentioned in my last food post, I was able to get caught up on my stack of unread magazines recently. While flipping through the April/May 2013 issue of Vegetarian Times, I was excited to see a story featuring several vegan recipes from Mark Bittman’s new book, VB6: Eat Vegan Before…

Test Report: Mushroom Stroganoff (vegan, gf)
I meant to have this post up hours ago, but my new Stella & Dot summer samples arrived today and let’s just say I’ve been distracted ever since! It’s like Christmas in April, I tell ya. I’ll introduce you to the new line very soon, and some lucky reader will win a fabulous giveaway ;). Stay tuned. Tuesday, April 2 marked 11 years of marriage for Hubs and me. It’s hard to believe 11 years have passed already. For our tenth year, we went big with a trip to Acapulco. This year was much less adventurous, but we still had a fun local weekend. Hubs got me these GORGEOUS roses. I think one of the yellow roses is a “triple bud”! I just made that…

Test Report: Baked Macaroni ‘n Cheese (vegan, gf)
Whew! Two big tasks (an Index page and business taxes) all in one day. So glad to have those two checked off my list. Thank you for the comments yesterday – it helps to know the efforts were worth it. About seven months ago, I wrote a post about a TERRIBLE Macaroni & Cheese with Broccoli recipe. It was an epic fail. So bad that it took me seven months before I attempted to test another vegan mac ‘n cheese recipe. I’m so sad that I waited that long. All that time, we could have been enjoying a different recipe, which according to VegNews is “the best mac ‘n cheese on the planet.” Notice they didn’t even say “best vegan mac ‘n cheese.” I haven’t tasted…

Test Report: Southwestern Quinoa Pasta Salad (vegan, gf)
I saw this image on How Does She’s Facebook page today and it couldn’t be more accurate. As far as I’m concerned, March can start going out like a lamb any day now. I’ve had enough snow and cold weather. Bring on the sunshine, Lord. Please. My sister, who now lives in Texas, brought her six kids home (to Michigan) for a visit over Spring Break. Talk about backwards – going from Texas to Michigan! My idea of Spring Break doesn’t involve building a snowman, but that’s what they did… They stayed with my parents, who live a couple of hours from me. I was getting ready to head down for an overnight visit with the whole gang and I needed a quick dish that…
