Two posts in one day? Yup. I’m on a roll. Must be all the fruits and veggies I’ve been eating this week. After two not-so-healthy recipe posts in a row (first Carrot Cake, then Mushroom Stroganoff), I promised to get back on track this week. And that I have. I can really tell a difference in my energy level. I know I’ve said it before, but it’s amazing what good fuel can do for your body. I get more magazines than I have time to read. Mostly because I have friends with kids whose schools raise funds via magazine subscription sales. Really, that’s just a good excuse for me to subscribe to one more magazine that I think I need. It’s a good cause, right?…

I saw this image on How Does She’s Facebook page today and it couldn’t be more accurate. As far as I’m concerned, March can start going out like a lamb any day now. I’ve had enough snow and cold weather. Bring on the sunshine, Lord. Please. My sister, who now lives in Texas, brought her six kids home (to Michigan) for a visit over Spring Break. Talk about backwards – going from Texas to Michigan! Test Report: Asian Ginger Plum Lettuce Wraps (vegan)

The theme of this post is QUICK! Not only because this meal (or appetizer) can be whipped up lickety-split, but also because I am racing against the clock to get my mile-long to-do list completed before we leave for our mission trip. Last week, a box of goodies from Wildtree came in the mail (I ordered and paid for them, this is not a paid review). I became familiar with this health-conscious company through a friend who reps their product. Hubs gets home from work, walks in the door. I’m in the kitchen, which is a disaster zone and I am very irritated… Hubs:  What’s wrong? Me:  Oh I just wasted all this time making this stupid recipe and it tastes like crap. Hubs:  Oh no. What is it? Me:  Mini chocolate tarts. They’re raw, you won’t like it. Test Report: Peanut Butter Crispy Rice Treats (vegan, gf)

Yikes. An entire week flew by without a single post. I can assure you it’s not because I was lazy. I don’t feel like I got that much done, but I sure feel like I was busy. Between design projects, dentist/doctor appointments, a million errands/tasks, book club, testing recipes, learning about food photography, getting my car fixed, cleaning up the pieces of our former garbage container that some idiot blew to pieces while he was probably texting just before he did a 180 and went into the ditch backwards (no one was hurt) and re-training the dogs to use the porta-potty in the garage so I don’t have to clean massive clumps of snow off them multiple times a day (don’t judge) – well, there…
