I know, I know – ANOTHER dessert post. Believe me, I’m well aware. I’ll be sure to get back to more entrée recipes soon. A while back, I mentioned a Lemon Bar recipe I found, tested and loved. I promised to share the recipe and finally, here we are. Actually, what I found was a Grapefruit Bar recipe which I converted to Lemon Bars. Traditionally, lemon bars are made with a lot of butter and eggs. Instead, this recipe uses coconut oil and silken tofu. Don’t freak out – you won’t even taste the tofu. I promise. There is still a load of sugar in this recipe, so I wouldn’t categorize it as healthy, but it’s definitely better for you than traditional lemon bars. And…

Test Report: Mushroom and Spinach Pockets (vegan)
I’m not really sure which teams are in the Super Bowl. Well, now I am. I just googled it. 49ers and Ravens. While I love to watch college football (Michigan Wolverines, in particular), pro football just doesn’t interest me much. But I do look forward to the clever commercials during the Super Bowl. And sometimes there’s a decent halftime show. Mostly I just like that the Super Bowl is a great excuse to get together with friends and munch on good food while feigning moderate interest in the game. And by good food, I don’t mean Doritos and Cheetos. I mean Creamy Artichoke Spinach Dip, Peanut Butter Crispy Rice Treats, Hummus with Toasted Pine Nuts, Veggie Quesadillas, Fresh Guacamole, Vegan Buffalo Bites and Mushroom &…

Test Report: Vegan Buffalo Bites + Blue Cheese Dressing
It’s easy to fall into ruts with our food choices, no matter what type of diet we eat. I tend to ingest lots of smoothies, veggie burgers/sandwiches/wraps, salads and rice/bean combos. So, when I found a recipe for Spicy Buffalo Cauliflower ‘Wings’, I knew I had try it. I haven’t made anything like this since going vegan. Hubs loves anything coated in buffalo sauce, so why not give it a go? And vegan blue cheese dressing – that had me intrigued. I’m happy to report that this was a very successful recipe test! No, the cauliflower did not magically taste like chicken. But it was still quite tasty – and so was the blue cheese dressing. It’s amazing how the textures in this recipe are…

Test Report: Vegan Pineapple Not-So-Fried Rice
RECIPE: Pineapple Not-So-Fried Rice FROM: Chloe Coscarelli’s cookbook, “Chloe’s Kitchen” I recently ordered this cookbook from Amazon (get it here) and was pleasantly surprised. If you’re not familiar with Chef Chloe Coscarelli, be sure to check out her gorgeous website, which is full of really great vegan recipes, videos and photos. She took home first place on Food Network’s “Cupcake Wars,” making her the first vegan ever to win on a Food Network competition. This girl’s got skills, yo. I love a cookbook with big, beautiful photos. This one doesn’t disappoint – it is FULL of them. In fact, the photo of this recipe looked so good that I HAD to try it. Although it is time-consuming, it is not difficult and the payoff is…
