Bust out your party hat and say HAPPY BIRTHDAY to 86 Lemons!!! Today marks the one year anniversary of my first blog post. It’s kind of fun to look back and see how far I’ve come. While I’m still learning and always will be, my photos have come a long way.
In fact, just yesterday I was teaching two friends how to use the manual settings on their DSLR cameras.
A year ago, I had no “cool” photo props. Over the past year, I’ve managed to build a nice little collection of plates/bowls, linens, utensils, etc. A year ago, I was still learning about new-to-me ingredients like chia seed, flax eggs, coconut oil, tapioca starch, lentils and dates (to name a few).
Now these are basic staples in our kitchen. Hubs even built me an open pantry wall to accommodate my different flours, beans, seeds, etc. A year ago, I would never have attempted to create my own vegan, gluten-free recipe for breakfast cookies. Look at me now…

Last week, a sweet friend brought me a pile of organic strawberries from her u-pick haul. I used some to make strawberry-banana ice cream. The others all went into a double batch of “Nutritious Strawberry Breakfast Cookies”.

The cookies are actually a great snack for any time, not just breakfast. Perfect for on-the-go, no utensils required–which is what Hubs needs as he heads out the door in the morning. Grab ‘n go.
I packed ’em full of great stuff like chia seeds, protein powder, coconut flakes and pecan chips–all optional, interchangeable ingredients so you can create your own version.


Why the square shape? Well, I made a visit to see a dear friend and her new baby last week.
After seeing what a balancing act she has on her hands (a 4-year old, an 11-month old, a newborn who arrived early, and lots of boxes to unpack in the house they moved into just a few weeks ago), I decided to send her a care package with healthy snacks.
I mean, who has time to prepare meals when you’ve got all that going on?! So the square shape was literally just to maximize space in the box. A, if you’re reading this today (6/19), they should be there tomorrow!

If you have loads of fresh strawberries to use up, make a double batch (which requires 4 cups of chopped strawberries) and give some to a friend, and/or freeze some for later. Enjoy!

These will go on my “to-make” list because I know my boys will love them. I’m going to wait until I get some fresh strawberries though.

I don’t think I’ve seen strawberries in cookies before..? they look wonderful, and I’m with Angela, cookies you can eat for breakfast have got to be a winner.
Now THIS looks like a legitimate breakfast cookie recipe. I find that most are laden with sugar! I will be trying this recipe in the near future!
