A few weeks ago, I had the grand idea of inventing a key lime coconut popsicle recipe for Cinco de Mayo. Unfortunately, it didn’t turn out so well. I must have used too much key lime juice because they were quite tart. Not horrible, just not what I hoped for. BUT, in the process, I learned an awesome trick for juicing key limes–use a garlic press! GENIUS! Worked like a charm. I decided to revisit that flavor combination another time, and moved on to Orange Creamsicle instead. I was shooting for a popsicle recipe, but as it turns out, I prefer this vegan, gluten-free recipe in its original form–as a creamy beverage. Instead of using navel oranges, I used my new favorite fruit discovery–minneola oranges….

Creamy Strawberry Herb Balsamic Dressing (vegan, gf)
Sometimes I get in a rut with salads and then I get sick of them. I need to change up the ingredients more often. Throw in a more fruity version like this one once in a while. Unless you’re like my dad who doesn’t like fruit in his garden salad. Then you’re just missing out, I guess. This post isn’t a recipe for a salad (it’s pretty easy to figure out the ingredients: spring salad mix, sliced strawberries, blueberries, cooked asparagus, pecans). Rather, I’m sharing the recipe for the magic ingredient–the DRESSING! This is a sweet, tangy, creamy dressing that is so easy to make. Just throw the ingredients into the blender and you’re done. Boring salad crisis averted. I found a similar recipe from…

Pineapple + Portobello Tacos with Roasted Chickpeas (vegan, gf)
Ahhh – SUNSHINE!!!! Finally. Nice weather can do wonders for my ambition level. It’s like the sun is beaming down all this energy into my body. Over the weekend, Hubs and I managed to get a whole lot of work done and continued right into Monday and Tuesday. Now we can barely move. We replaced the carpet in our living room with hardwood maple. There are just a few rows left to install, then onto sanding, staining and coating. If you want to test your marriage, this is a good way to do it. It doesn’t help that I might be the pickiest person on the planet. It DOES help that I married the most patient person on the planet. Joking aside, we’re actually a…

Test Report: Hearts of Palm and Avocado Salad (vegan, gf)
Two posts in one day? Yup. I’m on a roll. Must be all the fruits and veggies I’ve been eating this week. After two not-so-healthy recipe posts in a row (first Carrot Cake, then Mushroom Stroganoff), I promised to get back on track this week. And that I have. I can really tell a difference in my energy level. I know I’ve said it before, but it’s amazing what good fuel can do for your body. I get more magazines than I have time to read. Mostly because I have friends with kids whose schools raise funds via magazine subscription sales. Really, that’s just a good excuse for me to subscribe to one more magazine that I think I need. It’s a good cause, right?…

Test Report: Baked Spaghetti Squash with Creamy Roasted Red Pepper Sauce (vegan, gf)
This has nothing to do with this recipe, but can we just talk about The Bible miniseries on the History Channel for a second? Have you seen it? I had been hearing a lot about it. Last night, after getting home from a trunk show, I decided to go straight to bed because I was out of gas. Then I remembered this series and found it on On Demand. Hubs and I started watching it and couldn’t turn it off! We got about an hour into Episode 1 before we finally decided to call it a night. This five-part miniseries (10 hours total) debuted on March 3, so two of the episodes have already aired, with the third airing this Sunday at 8/7C. Also, the…
